I have always been obsessed with the latest keto-friendly granola and/or protein bars. (Currently Built Bars are my go-to).
But sometimes I would rather make my own at home rather than buy them to save some money.
These Low Carb Easy Granola Bars have become my go-to recipe for this! They are EXTREMELY easy to make (you could literally make them in your sleep) and are very versatile. You can add whichever mix-ins you like but I’ve provided one of my favourite recipes below.
I hope you guys give them a go and tag me in your own creations on instagram (@sammysamgirl)! I’d love to see what bars you come up with.
If you aren’t a fan of one of the dry ingredients in this keto granola bar recipe, you can always swap it out for something else (these are very versatile):
*Store these in the fridge in an airtight container between layers of wax or parchment paper OR you can also freeze them this same way.

Keyword: granola bars
Servings: 6 bars
- 1 cup almond flour 112g
- 2 1/2 tbsp unsweetened shredded coconut 35g
- 2 tbsp ground flax meal 13g
- 2 1/2 tbsp chopped peanuts 35g
- 2 1/2 tbsp stevia sweetened chocolate chips 35g
- 2 tbsp powdered monkfruit/erythritol sweetener 26g
- 1/4 tsp cinnamon
- pinch of salt
- 3 tbsp butter 45g
- 1 1/2 tbsp sugar free maple syrup 20g ( I just used E.D Smith’s syrup for this but you can use any brand)
In a large bowl, combine all of the ingredients up to and including salt.
In a microwavable bowl, melt your butter. Pour this over the dry mixture.
Also drizzle in your syrup.
Stir well until the dough is mixed well enough to where it can be formed into a ball in your hand.
Now take the dough and press it into the bottom of a wax or parchment paper lined loaf pan. Use your hands to make sure the top is flat and even.
Refrigerate for ~3 hours or overnight then slice into 6 bars OR 8 squares depending on how big you want them.
